根登第三代手工老鼠粉 Kundang Handmade Lou Shu Fun

根登新村 (Kundang) 位于雪蘭莪,與吉隆坡相距約40公里,以客家人居多。
拥有逾60年历史的新龙记小食馆是该村内唯一一家为大家提供手工老鼠粉的食馆,無疑是村裡最具代表性的客家食肆之一。
曾毓伟是该店的第三代传人。尽管经历数十年的风雨,但保留了爷爷时代的味道,先前留下的灶头至今还用着。
曾先生已接手至今十多年了。除了手工制作的老鼠粉外,加上多種手工做濃濃客家味的炸釀料,如:炸肉丸、炸春捲、炸釀豆卜、炸釀腐竹和釀豆腐也是干捞和清汤老鼠粉的特色配料。放些葱蒜味十足的香浓肉碎,洒把青葱。
现做现卖手工制作的老鼠粉,口感会比工厂制作的来得更好,入口又嫩又滑,煮汤、干捞一样可口,因而成了大马道地的美食之一。此店也是雪隆一带的脚车晨运者的歇息老地方。
手工老鼠粉制作如下:
(一)先洗米,然后米浸泡上两三个小时。
(二)待白水软化后,即放入机器内,搅拌成米浆。
(三)将米浆倒入布袋内高挂一个晚上(至少7小时), 让水分
流干,留下粉状(渣)。
(四)以米渣合混合面粉,薯粉搓成面团后;在布满小孔的磨板上挤
压,一条条的一寸长的老鼠粉就成形了!

If your appetite is adventurous enough for some fascinating local servings take a trip 40 km rom Kuala Lumpur to the quaint town of Kundang. Find the town's morning market , walk around the back lanes and you will find a crowd at the sitting area right outside this shop called Sin Loong Lee. You have hit bull's eye! Here's the landmark, 3rd generation  "lou shee fun" (literally means "rat's tail noodle)shop that the town is famous for. You will see not just locals but even mountain bikers from the Klang Valley here. The noodles are handmade fresh,served with other specialties such as "yong tau foo", meat balls and more. Go Kundang! Certainly your trip out of town would be worth it!
