潮式功夫茶，小小一杯，裊裊輕煙，淺呷一口頓覺齒頰留香。潮州人喝茶，以鐵觀音為主，認為茶湯越濃，越能消脂去膩。炭焙的鐵觀音，乃舊有的製茶方法，比電焙多了幾分明火的剛猛。那獨特的回甘，以及複雜而悠長的層次感，正好體現潮州人粗中有細的豪邁個性。
