Rolos were one of my favourite Tuck Shop treats at school. I suppose the idea is to share them but I found it all too easy to smash an entire packet all my myself. That's how delicious they are! So obviously they got the cupcakes treatment a long time ago and now it's time to share that recipe with you guys! Have fun!
Recipe -
for the caramel...
175g caster sugar
75ml water
175ml double cream
1/2 tsp vanilla extract
for the cupcakes...
140g plain flour
185g caster sugar
30g cocoa powder
1/4 tsp salt
1/2 tsp bicarbonate of soda
40g chocolate chips
1 lg egg
125g buttermilk
120ml coffee
100ml vegetable oil
For the buttercream...
1/2 batch of caramel
200g soft unsalted butter
320g icing sugar
Ganache and Rolos to decorate!
