No one would hire him. This is the Indian chef cooking extraordinary Italian food in Melbourne.

Meet David Lakhi, chef and co-owner (with his wife Emilia Lakhi) of Little Black Pig and Sons. His food story starts at 11 years old in Punjab, India, baking his first cake in a discarded solar oven. At 19 he moved to Australia chasing a dream of becoming a cook, but no one would give him a job in a kitchen. Then he met Nonna Clara, a 74-year-old Italian matriarch who took him under her wing and taught him everything she knew.

For 12 years, David picked Clara up at 6:30 every morning to make pasta, sauces and gnocchi entirely by hand, up to 200 kilos of it a week. She didn't just teach him technique. She taught him to cook from the heart.

We spent the day in David's kitchen trying the agnolotti filled with butternut squash and buffalo ricotta, a Tasmanian wagyu beef tartare finished with WA truffle, the porchetta that hasn't left the menu in 9 years, and a chestnut pappardelle with slow-cooked lamb ragu. Every dish carries the same philosophy: cook the way you like to eat.

David has faced racism throughout his career, including as a restaurant owner, and says he refuses to let it define him. What he's built instead is a kitchen full of genuine love for food.

This one is about persistence, mentorship and what happens when someone refuses to give up on the thing they love.
