We start the day with runbing, a fresh Taiwanese spring roll which is very similar to popiah which can be found in Malaysia, Singapore and Indonesia. A wheat flour wrapper encloses a number of ingredients including crisp, blanched cabbage, tofu, slices of pork belly, broad beans and a peanut and sugar mixture. It’s fresh, filling and delicious.

We then head to a popular local spot to sample their fried milkfish and oily shrimp rice. Milkfish is really popular in Taiwan- it’s a mild tasting fish with a fatty belly almost akin to the texture of pork belly. It’s mouthwatering. The accompanying oily shrimp rice is tasty too- oiled grains dotted with small, meaty shrimp.

Our next stop is pretty special. We eat a beef soup from a stall which obtains a delivery of beef straight from the slaughterhouse twice each evening. The beef is thinly sliced and dunked in a beef broth before being served with shredded ginger. It’s incredible. The meat is super tender and flavoursome, the broth light and subtle. This is a must eat in Tainan!

Onwards to our final stop for a Tainan specialty- shrimp rolls. Juicy shrimp, spring onions and cabbage are encased in caul fat before being deep fried and served with pickled ginger and a wasabi and soy dipping sauce. These are SO. GOOD. We visit a really local spot- every table has a plate of these shrimp rolls and we can see why! The shrimp mixture is perfectly cooked and dotted with spring onions whilst the outer is crispy. We devour the whole plate. Another must eat in Tainan!

Beef soup from 鄭牛肉湯, No. 2, Lane 47, Section 4, Jinhua Road, West Central District, Tainan City, 700. Open Tuesday to Saturday 5:00pm to 2:00am, Sunday 5:00pm to midnight. Closed Monday.

Shrimp rolls from 黃家蝦捲, No. 268, Xihe Road, West Central District, Tainan City, 700. Open daily 2:30pm to 8:00pm.
