Eating Crazy Spicy Quail (นกกระทาผัดเผ็ด) in Nakhon Sawan — Countryside Thai Food in 4K!

Nakhon Sawan (นครสวรรค์) is a city and province in Central Thailand. Although my wife is originally from Krabi in the South of Thailand (where her father is from), her mother is originally from Nakhon Sawan. So we decided to take a quick family trip to Nakhon Sawan (นครสวรรค์) to visit her grandmother and to eat some crazy spicy Thai food!
The last time I went to visit, my wife’s uncle had caught some field rats — these are not city rats, but free range field rats, which are very common to eat. He made an amazing Thai food dish of minced rat with chili paste and lots of extra chilies and garlic. On this visit to Nakhon Sawan (นครสวรรค์) I asked if we could eat rat again, but unfortunately they couldn't get any from the field this time… so we settled for some quail, cooked rat style!
The recipe for this spicy Thai food dish included these ingredients:
Quail (นกกระทา nok krata)
Curry paste (เครื่องแกงเผ็ด kreung gaeng ped)
Coriander seeds (เม็ดผักชี med pakshe)
Fish sauce - น้ำปลา (nam pla)
Holy basil (กระเพรา kraprao)
Chilies - (พริก prik)
Garlic - (กระเทียม gratiem)
This dish in Thai is called nok krata pad ped (นกกระทาผัดเผ็ด), which is quail stir fried with lots of chili.
I love the countryside of Thailand, especially the Thai food culture and eating interesting and bizarre and crazy spicy foods is also awesome.
