Le Jean’s Honey Glazed Short Ribs
1.2 kg Le Jean's short ribs
1 tablespoon vegetable oil
Salt and pepper
For the Honey Glazed mixture
3 tablespoons brown sugar
1 tablespoons honey
1 teaspoon ground ginger
2 teaspoons chilli paste
½ teaspoon salt
50ml water
200ml limoncello (alternatively a mixture of 100ml water, 100ml lemon juice and 50g sugar)

1. Preheat the oven to 170C/Gas 3
2. In a bowl add all the honey glazed ingredients and give a good mix
3. Heat up the oven tin on medium heat and add the oil.
4. Sear the ribs for 3-4 mins on each side until brown. Season with salt and pepper.
5. Rub the mixture on the ribs and turn off the heat.
6. Pour in the limoncello and water in the oven tin.
7. Roast the ribs in the oven for 1 hour then take them out and pour on the ribs the remaining honey glazed mixture, turn them around and bast with the juice before putting them back in the oven for 2 hours, basting every 30 mins until the meat is tender and falling away from the bone.
8. Take them out from the oven and give one final bast before cutting it to serve.
