Well it's the end of the summer and this week I am just doing a nice and simple chicken wing recipe. These are homemade chicken wings and these are baked chicken wings that are inspired by the flavors of Southeast Asia. I love the flavors of Thailand, Vietnam, Cambodia and Malaysia as they are so versatile and delicious. You can work with this chicken wing recipe one of two ways. The first is to coat the wings and then bake them or bake the wings and then coat them. Each way is delicious!

Ingredients:
4 Lbs. chix wings.
2 Green Jalapeno chilies.
4 to 8 Red Thai bird chilies
Heads removed from chilies keep seeds and pith for heat if desired if not then clean.
8 Clove garlic roughly chopped.
1-2 Tbsp. Brown sugar. I found the brown sugar worked better than molasses.
1 -2 Tbs. Peeled and roughly chopped galangal or ginger.
1 Cup chili lime cashews. Any deluxe nut or even plain peanuts will work.
1-2 Tbsp. Tahini dip.
2 Tbsp. Lime juice.
2 Cups Olive oil.
1 Cup basil.
1/2 Cup cilantro.
1/2 Cup mint.
1-2 Tbsp. fish sauce.
1 Tbsp. Rice vinegar.
1-2 Tbsp. finely chopped lemongrass from the stalk.
2-4 Kaffir lime leaves finely sliced.

Method:

Put basil, cilantro and mint into a processor or blender and pack it down.
Now add olive oil, fish sauce, lime juice and rice vinegar into processor.
Blend until smooth.
Now add garlic, ginger and lime leaves into processor blend until smooth.
Now add your chilies and blend into mixture.
Now add brown and tahini dip and blend.
Now add your nuts and blend.

Now take your pesto and pour some into a med to large bowl.
Add some flour to another bowl.
Now there are two ways to make these wings. The first is to dip the wings in the flour and then into the pesto and then onto the baking sheet. This works well.

The other way is to bake the wings and when done dip them into the pesto and then plate. Either ways works well and is delicious.

Make sure to preheat your oven to 400 before baking the wings either way. Enjoy!
